One of the things we really like about this recipe is that it only requires 5 ingredients and only two of these need to be refrigerated. This makes it a really simple recipe to pack into a bag which will leave your fridge free for the essentials. 

One secret of a great houseboat recipe is how many dishes it requires. We love a good recipe that only has a few dishes because it means more time enjoying the water and less time doing dishes. You can make this recipe pretty quickly while only getting three dishes dirty, which makes clean up almost as easy as cooking the dish.

The recipe is pretty simple and only takes a few minutes to complete making this a houseboat recipe that you will want to use again and again for your houseboat vacation.

Bacon Asparagus Pasta

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Servings: About 4 

  • 1/2 lb Uncooked Pasta-we like thin pasta like angel hair, but bow ties or linguine work well too
  • ½ lb uncooked bacon diced-this works out to be about 8 strips or half a package
  • 1 Cup of Canned Diced Tomatoes with Chiles or Rotel Tomatoes (Drained)
  • ½ lb fresh asparagus-you will need to trim the ends down to about 2 inch pieces
  • ½ cup of dry white wine-you can substitute this with chicken broth if needed
  • ½ cup Parmesan cheese-you can use grated or flaked cheese for this

Directions

Start by getting a large pot of water to a boil and getting the pasta cooked. The time that you keep the pasta in will depend on the type that you use, but you want it to come out al dente

Heat up your saute pan and cook up the bacon until crispy. As you remove the bacon you want to keep the grease in the pan since you will be using it on the next few steps.

Add the asparagus to the pan to let it saute in the grease. This will take about 5-6 minutes then remove it with a slotted spoon.

Once you have removed the asparagus start to add the white wine or chicken broth. Make sure to scrape up any cooked on bacon to add to the sauce. You will want to cook this for about 5 minutes or until half of the wine/broth has cooked off.

Drain the pasta once it is fully cooked. Then add it to the pan along with the bacon and asparagus and ¼ cup of the cheese.
