Houseboat Recipes: Feed Your Whole Family With These Chicken Tacos

One of the major perks of this recipe is that you can dress it up to fit just about anybody’s tastes. If you have friends that are more health-conscious you can always bring salad so they can make a nice chicken taco salad. Others might use nachos to make some killer chicken nachos. And some might go the traditional route and wrap it in a tortilla for a nice traditional taco or burrito. 

We recommend keeping the toppings relatively light so you have less to bring on board. You should be able to get by with salsa, a few limes, lettuce, and queso. The best part of this is that only the lettuce needs to be refrigerated (depending on the salsa you bring). This leaves more space in the fridge or cooler for the rest of your meals. A few other options that we enjoy are cilantro (or other fresh herbs), jalapenos, or avocados.

Crockpot Chicken Tacos

Prep Time: 5 Minutes

Cook Time: 4 Hours on High, 8 Hours on Low

Servings: About 4 (you can easily double without adding time)

  • 4 Boneless Skinless Chicken Breasts
  • 1 Cup of Salsa
  • 1 Cup of Canned Diced Tomatoes with Chiles or Rotel Tomatoes (Drained)
  • 1 Packet of Taco Seasoning
  • 1/2 Onion Diced

Directions

1.

Dice up onion and place it and the chicken on in the Crockpot.

Drained the canned tomatoes and combine them in a bowl with the salsa and taco seasoning.

Pour mixture over chicken and set Crockpot to High for 4 Hours or Low for 8 Hours

Remove Chicken Breasts from the Crockpot and shred using forks before serving
