Breaded Lemon Chicken

Prep Time: 15 Minutes

Cook Time: 15 Minutes

Servings: About 4 

  • 2 boneless, skinless chicken breasts
  • ⅓ cup lemon juice
  • 1 ½ cup seasoned breadcrumbs
  • Oil to cook in
  • Lemon pepper

Directions

Slice the chicken breasts in half so you have two, thin chicken breasts. Place these onto plastic wrap and put a second layer of plastic wrap on top. Then use a mallet or club to flatten them out until they are about ¼ inch thick

Put lemon juice into one bowl and breadcrumbs in another. Let chicken breasts sit in the lemon juice for 2 minutes on each side, one at a time. As you pull them out place them in the breadcrumbs and push them down, then flip over and repeat.

Add the chicken breasts, 2 at a time to a heated pan with oil in it. Cook them until the bread crumbs turn golden brown and then turn them over with tongs. Once you have completed let them rest for 5 minutes on a paper towel before serving.
